13 - Another ¼ teaspoon kosher salt.
14 - 1-2 tablespoons of Greek yogurt for creaminess.
15 - Hot, prepared mashed potatoes for serving.

# Preparation Steps:

01 - Heat a mix of oil and butter in a big frying pan. Cook the onions for around 5 minutes till soft. Sprinkle chicken with the seasonings. Sear strips for 4-5 minutes per side. Set aside chicken and onions, keeping them warm.
02 - Use medium-low heat to melt butter. Add in the flour and stir well, cooking for a minute. Gradually pour in the broth while whisking to get rid of lumps. Toss in thyme, salt, and pepper. Simmer for 2-3 minutes as it thickens.
03 - Add the chicken strips back to the pan. Cover and let cook for 3-4 minutes. Take the pan off the heat and mix in yogurt until smooth. Serve everything on top of fluffy mashed potatoes.
