Preheat oven to 175°C. Line a large baking sheet with parchment paper or a silicone baking mat.

In a medium bowl, thoroughly mix the cooked shredded chicken with the barbecue sauce until evenly coated.

Arrange half of the tortilla chips evenly onto the prepared baking sheet. Distribute half of the BBQ chicken mixture and half of the shredded cheese over the chips.

Layer the remaining tortilla chips, followed by the rest of the BBQ chicken and shredded cheese.

Sprinkle chopped pickled jalapenos and red onion across the top.

Place the baking sheet in the oven and bake for 11–13 minutes, or until the cheese has completely melted.

Remove from oven and drizzle with queso blanco and extra barbecue sauce. Return to the oven and bake for an additional 3–4 minutes.
