# What You'll Need:

01 - 1 pound of Italian sausage.

06 - One big can (28 oz) of crushed tomatoes.
07 - A standard can (14 oz) of diced tomatoes, including liquid.
08 - Four cups of chicken stock.
09 - Two packs of fresh cheese-stuffed tortellini (9 oz each).
10 - Three-fourths cup of heavy cream (optional).
11 - Two handfuls (about 2 cups) of fresh spinach leaves.
12 - Salt and pepper, adjusted to your liking.

# Preparation Steps:

01 - Brown sausage and onions together for about 7 minutes, breaking apart the sausage as it cooks. Get rid of any extra grease if needed, then add garlic and cook for 30 seconds.
02 - Transfer the sausage mix into the slow cooker. Throw in the celery, carrots, both types of tomatoes, and the chicken stock.
03 - Cook on LOW for 7-8 hours or on HIGH for 4-5 hours, depending on your schedule.
04 - Toss in tortellini, spinach, and cream. Turn the cooker to HIGH, stir now and then. Don’t forget to sprinkle in salt and pepper to adjust flavors.
