# Needed Ingredients:

01 - 170–225 g sushi-grade raw salmon, sliced

→ Aromatics

02 - 1 very small shallot, finely minced

→ Dressing

03 - 2 tablespoons extra virgin olive oil, divided
04 - 2 tablespoons freshly squeezed lemon juice (from ½ lemon)
05 - 2 tablespoons freshly squeezed lime juice (from ½ lime)
06 - 1 tablespoon soy sauce or tamari

→ Garnish

07 - Sliced scallions, chives, or micro-greens, as desired
08 - Flaky sea salt, optional

# Preparation Steps:

01 - Finely mince the shallot with a sharp knife until very small pieces are achieved.
02 - Extract juice from half a lemon and half a lime, collecting approximately 2 tablespoons of each.
03 - Using a sharp knife, carefully slice the salmon against the grain into uniform pieces about 0.5 cm thick, if not pre-sliced.
04 - In a measuring cup or mixing bowl, combine minced shallot, lemon juice, lime juice, and soy sauce. Whisk until fully blended.
05 - Drizzle one tablespoon of olive oil evenly over the base of the serving plate.
06 - Lay the salmon slices attractively on top of the oil-coated plate.
07 - Drizzle remaining tablespoon of olive oil over the arranged salmon. Carefully pour the citrus soy dressing around the salmon slices without covering them.
08 - Top with sliced scallions, chives, or micro-greens. Optionally sprinkle with flaky sea salt. Serve immediately while chilled.
