Potato Kielbasa Soup (Printable Version)

# What You'll Need:

01 - 100g cheddar, shredded fine.
02 - 1 medium onion, chopped small.
03 - 300g kielbasa, cut into small pieces.
04 - 1 medium carrot, minced.
05 - 2 celery sticks, chopped small.
06 - 4 garlic cloves, minced.
07 - 750g potatoes, cubed and peeled.
08 - 30g parsley, roughly chopped.
09 - 1/2 teaspoon chili flakes.
10 - 300ml whole milk.
11 - 1 tablespoon olive oil.
12 - 1.25 litres of chicken broth.
13 - Salt and pepper for flavor.

# Preparation Steps:

01 - Warm the olive oil in a big pot. Cook the kielbasa pieces till browned and crunchy. Take them out and keep them aside.
02 - In the same pot with leftover pan oils, toss in the onion, carrot, and celery. Cook for a while. Add in garlic and chili flakes last.
03 - Put in cubed potatoes and chicken broth. Bring everything to a boil, then lower to simmer for 10 to 12 minutes so the potatoes soften.
04 - Slowly mix some hot soup into the milk, then pour it back into the pot. Toss in cooked kielbasa and melted cheese, stir gently. Add parsley and adjust salt and pepper.
