Evenly spread the butter mixture onto one side of each bread slice. Arrange the coated slices, buttered side up, on a tray until ready for assembly.

Place one slice of bread, buttered side down, in a skillet over medium-low heat. Layer with one slice of mozzarella, 6 pepperoni slices, another slice of mozzarella, 6 more pepperoni slices, and a final slice of mozzarella. Top with another bread slice, buttered side up.

Cover the skillet with a lid to facilitate cheese melting. Cook until the bottom is golden brown, about 3–5 minutes. Carefully flip the sandwich, replace the lid, and cook until the opposite side is golden brown and the cheese is fully melted.
