Pepper Spinach Chicken Melt (Printable Version)

# What You'll Need:

01 - About 2 pounds (4 medium-sized) chicken breasts.
02 - Season with pepper and salt as needed.
03 - 1/4 cup plain flour.
04 - 2 tablespoons olive oil, keep separate for steps.
05 - 1 tablespoon of softened butter.
06 - Half a cup of roasted red peppers from a jar, sliced thin.
07 - A cup and a half of fresh spinach leaves.
08 - Three garlic cloves, finely chopped.
09 - Four slices of mozzarella (the fresh kind).

# Preparation Steps:

01 - Slice a pocket into each chicken breast. Dust them with flour after seasoning with salt and pepper.
02 - Melt butter with a spoonful of oil in a skillet that can go in the oven. Brown the chicken for a couple of minutes per side, then take it out.
03 - Cook the spinach and peppers in the rest of the oil for a few minutes. Add the garlic last, stirring briefly to bring out the flavor. Adjust seasoning as you like.
04 - Stuff each chicken piece with mozzarella and the spinach-pepper mix. Use toothpicks to keep things together. Bake for 20-25 minutes at 375°F, aiming for an inside temp of 165°F.

# Additional Tips:

01 - Take out the toothpicks before you plate it.
02 - Jarred peppers make this faster for busy nights.
03 - You'll want a pan that’s safe for oven use.
