Middle Eastern Tofu Kebabs Vegan (Printable Format)

Aromatic tofu kebabs packed with fresh herbs and Middle Eastern spices. Vegan, gluten-free, and delicious.

# Needed Ingredients:

01 - 450 g firm tofu, drained and prepared as per packaging instructions
02 - 1/4 red onion, finely chopped
03 - 3 garlic cloves, minced
04 - 1.5 teaspoons ground cumin
05 - 1.5 teaspoons ground coriander
06 - 1 teaspoon sumac
07 - 1 teaspoon dried mint
08 - 0.5 teaspoon ground turmeric
09 - 0.5 teaspoon chilli powder
10 - 0.5 to 1 teaspoon salt
11 - 0.25 teaspoon ground black pepper
12 - 3 tablespoons tomato purée
13 - 65 g chickpea flour or plain flour
14 - 15 g fresh parsley, finely chopped
15 - 15 g fresh coriander, finely chopped
16 - Neutral oil, for frying

# Preparation Steps:

01 - Place the drained and prepared tofu into a large mixing bowl. Crumble it into small pieces using your hands.
02 - Add chopped red onion, minced garlic, ground cumin, ground coriander, sumac, dried mint, turmeric, chilli powder, salt, black pepper, tomato purée, chickpea flour or plain flour, chopped parsley, and chopped coriander to the tofu.
03 - Using clean hands, thoroughly mash and mix all ingredients until a cohesive mixture forms that holds its shape when pressed.
04 - Portion the mixture and form into small kebab shapes or round patties. Avoid making them too large to ensure they hold together well. Aim for approximately 12 mini kebabs.
05 - Heat a small amount of neutral oil in a non-stick frying pan over medium heat. Fry the kebabs for about 1 minute per side, turning to ensure all surfaces are evenly browned.
06 - Transfer kebabs to a plate. Serve hot with rice, pitta bread, salad, and a side of hummus or tahini sauce.
