In a large mixing bowl, whisk together flour, baking soda, and kosher salt. Set aside.

In another bowl, beat sugar and softened butter together using a stand mixer or hand mixer until smooth and creamy.

Beat in eggs one at a time until fully incorporated, then mix in mashed bananas until thoroughly combined.

Add dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing.

Divide batter evenly among three bowls. Tint each bowl with a different food coloring: one pink, one purple, one neon green. Mix until colors are evenly distributed.

Using an ice cream scoop or 1/4 cup measuring cup, alternate scooping colored batters into the prepared loaf pan, layering rainbow sprinkles between dollops until all batter is used.

Bake in preheated oven for 45 to 65 minutes, or until a toothpick inserted into the center comes out clean.

Let bread cool in the pan for 10 minutes. Remove loaf from pan and cool completely on a wire rack.
