Set oven to 230°C. Pat the chicken wings thoroughly dry with paper towels.

In a large bowl, combine the chicken wings with potato starch, baking powder, garlic powder, onion powder, and paprika. Toss to ensure all pieces are evenly coated.

Lightly spray a parchment-lined baking tray with oil. Arrange the wings in a single layer and spray the tops with additional oil.

Reduce oven temperature to 220°C. Bake the wings for 35–40 minutes, flipping halfway and reapplying a light spray of oil to ensure crispiness.

While the wings bake, place honey, lemon juice, lemon zest, minced garlic, butter, ground black pepper, and a pinch of salt in a small saucepan over medium heat. Stir and simmer for 3 to 5 minutes until fully combined.

Transfer baked wings to a large bowl. Pour the honey lemon pepper sauce over the wings and toss until evenly coated. Optionally, reserve a small amount of sauce for dipping.
