Effortless Turkey Soup (Printable Version)

# What You'll Need:

01 - 1 tbsp of butter.
02 - 1 tbsp of olive oil.
03 - 2 celery sticks.
04 - 1 big carrot.
05 - 1 onion or a couple of shallots.
06 - 4 sprigs of fresh thyme or 1/2 tsp if using dried.
07 - 6 cups of chicken or turkey broth.
08 - 1 big clove of garlic.
09 - 2 cups of shredded cooked turkey or chicken.
10 - 1/2 cup of pearl couscous.
11 - 1 tbsp of fresh parsley, chopped.
12 - 2 bay leaves.
13 - Salt and black pepper, adjust to your preference.

# Preparation Steps:

01 - Melt butter and heat oil together in a big pot.
02 - Finely chop garlic, carrot, onion, and celery.
03 - Let the veggies cook gently with the thyme for about 5 minutes.
04 - Add the stock to the pot.
05 - Throw in the turkey pieces along with the bay leaves.
06 - Increase heat until it’s bubbling.
07 - Season with as much salt and pepper as you need.
08 - Add the pearl couscous.
09 - Let it cook until the couscous is soft, roughly 10 minutes.
10 - Sprinkle the fresh parsley over the top.
11 - Serve while it’s warm.
