# What You'll Need:

01 - 2 big chicken breasts.
02 - Seasoning: just salt and pepper.
03 - Flour to coat the chicken.
04 - 2 tablespoons of olive oil.
05 - 2 tablespoons of butter.
06 - 12 ounces of cremini or white mushrooms, sliced up.
07 - A pinch (1/4 teaspoon) of Italian herbs.
08 - 3 minced garlic cloves.
09 - 1/2 cup of chicken stock.
10 - 1/2 teaspoon of fresh lemon juice.
11 - 1/2 teaspoon of Dijon mustard.
12 - 1 cup of thick cream (heavy).

# Preparation Steps:

01 - Slice the breasts into four pieces each and sprinkle with salt and pepper. Give them a light floury coating.
02 - Heat some oil in your pan, then cook each side of the chicken for about 4-5 minutes until they're beautifully browned. Take them out and set aside.
03 - Melt the butter and toss in the mushrooms with the Italian herbs. Cook until the mushrooms release their juices and get that nice golden look. Take them out of the pan.
04 - Stir in garlic, stock, lemon juice, and Dijon. Let it bubble and thicken up a bit—then pour in the cream.
05 - Pop the chicken and mushrooms back in. Simmer 5 minutes so the chicken warms through and the sauce gets nice and creamy.
