Crispy Mac Balls (Printable Version)

# What You'll Need:

→ Base

01 - 2 cups freshly grated cheddar cheese
02 - 2 cups chilled leftover macaroni and cheese

→ Breading Station

03 - 2 cups panko breadcrumbs for coating
04 - 1/4 cup milk to blend with eggs
05 - 1 cup plain all-purpose flour
06 - 2 large eggs, whisked until smooth

→ Frying & Seasoning

07 - Vegetable oil for frying
08 - Salt and fresh ground pepper to season

# Preparation Steps:

01 - Grab your cold mac and cheese, scoop it into your hand, and roll each portion into a lump about the size of a golf ball. It’s easier to shape when cold.
02 - Set up three dishes for breading: one for flour, another for the egg and milk combo, and the third for breadcrumbs. This gets you all set to coat those balls.
03 - Give each ball a light dusting of flour first, then dip it into the egg mixture, and roll it around in breadcrumbs until it’s completely covered. Make sure each coat sticks!
04 - Bring your oil to 350°F (175°C). Drop the balls gently into the hot oil in small groups. Fry them for about 3-4 minutes until super crispy and golden. Avoid crowding the pot.
05 - Rest the fried bites on some paper towels to drain any extra oil. Sprinkle on a pinch of salt and pepper while they’re still hot, and serve them up on the spot.

# Additional Tips:

01 - Keeping the mac and cheese cold makes these easier to roll and fry.
02 - You can shape and freeze them ahead to fry later.
03 - Perfect for party trays or game day munchies.
