Grab your cold mac and cheese, scoop it into your hand, and roll each portion into a lump about the size of a golf ball. It’s easier to shape when cold.

Set up three dishes for breading: one for flour, another for the egg and milk combo, and the third for breadcrumbs. This gets you all set to coat those balls.

Give each ball a light dusting of flour first, then dip it into the egg mixture, and roll it around in breadcrumbs until it’s completely covered. Make sure each coat sticks!

Bring your oil to 350°F (175°C). Drop the balls gently into the hot oil in small groups. Fry them for about 3-4 minutes until super crispy and golden. Avoid crowding the pot.

Rest the fried bites on some paper towels to drain any extra oil. Sprinkle on a pinch of salt and pepper while they’re still hot, and serve them up on the spot.
