Cut the overripe bananas into 2.5 centimetre pieces and set aside.

In a large bowl, whisk together the egg white, sifted all-purpose flour, cornstarch, baking powder, ice-cold water, and 1 tablespoon of oil until a smooth, lump-free batter forms.

Gently fold the banana pieces into the batter until evenly coated.

In a small pot, pour vegetable oil to a depth of 5–7 centimetres and heat over high heat until smoking slightly or reaching 180°C.

Using a slotted spoon, transfer battered banana pieces into the hot oil in batches. Fry, turning occasionally, until deeply golden and crisp on all sides.

Remove fried bananas with a slotted spoon and drain on a plate lined with paper towels. Repeat frying the remaining batches.

Dust the fried bananas with powdered sugar. Serve warm with optional maple syrup or chocolate sauce.
