Creamy Tomato Spinach Pasta (Printable Version)

# What You'll Need:

01 - 8 ounces pasta, not yet boiled.
02 - 2 tablespoons butter.
03 - ½ tablespoon flour.
04 - 3 cloves garlic, chopped finely.
05 - ½ cup white wine or chicken stock.
06 - ½ teaspoon Dijon mustard.
07 - 1 teaspoon fresh lemon juice.
08 - ½ teaspoon Italian seasoning.
09 - ½ cup sun-dried tomatoes.
10 - ¾ cup heavy cream.
11 - ⅓ cup parmesan cheese, freshly grated.
12 - 2 cups baby spinach, tightly packed.
13 - Salt & pepper for seasoning.

# Preparation Steps:

01 - Cook pasta in water with salt until firm to bite.
02 - Melt butter in pan. Stir in flour and garlic for half a minute.
03 - Add wine, mustard, lemon juice and herbs while stirring. Let it cook down.
04 - Put in tomatoes and cream, let bubble for 5 minutes. Add cheese and spinach until soft.
05 - Blend pasta with sauce, adding some cooking water if too thick. Add salt and pepper and enjoy hot.
