Effortless Chicken Cordon Bleu (Printable Version)

# What You'll Need:

01 - 5 cups chicken broth.
02 - 7 cups diced potatoes.
03 - 1 cup half-and-half cream.
04 - 2 cups shredded mozzarella cheese.
05 - 1 medium onion, finely chopped.
06 - Black pepper, add as desired.
07 - 2 teaspoons dried parsley flakes.
08 - 2 cups ham, cut into small cubes.
09 - 1 large carrot, chopped into pieces.
10 - 2 teaspoons Dijon mustard.
11 - 1/2 teaspoon dried thyme.
12 - 2 cups cooked chicken, chopped up.

# Preparation Steps:

01 - Throw the first 9 items in a pot. Let it boil, then lower heat to simmer for 20 minutes until the potatoes are soft. Scoop out 2–3 cups of the veggies, smash them up, and put them back. Pour in the half-and-half, cook another 5 minutes, and stir the cheese in last.
02 - Drop the first 9 ingredients into the slow cooker. Set on LOW for 7 hours or HIGH for 3. Smash some of the veggies, return them, mix in the cream, and let it cook 15 more minutes. Toss in the cheese at the end.

# Additional Tips:

01 - Perfect for using up leftovers.
02 - Mashing a few potatoes thickens the soup naturally.
03 - Pick your method depending on how much time you have.
04 - Yields about 12 cups altogether.
