# Preparation Steps:

01 - In a large mixing bowl, combine ground chicken, chopped shrimp, scallion, cornstarch, salt, fish sauce if using, sesame oil, and white pepper. Mix thoroughly until the mixture is cohesive.
02 - Place one wonton wrapper on the palm of your hand. Spoon 1/2 tablespoon of filling onto the center. Moisten the edges of the wrapper with water using your fingertip, then fold and press the edges to seal tightly without any openings remaining.
03 - Continue assembling the remaining wontons in the same manner, ensuring each one is securely sealed.
04 - In a deep frying pan or wok, heat vegetable oil to 350°F (175°C). Carefully fry wontons in small batches, turning occasionally, until they are evenly golden brown and crisp, approximately 3 to 5 minutes per batch.
05 - In a small bowl, combine Thai sweet chili sauce, lime juice, chopped cilantro, and sesame seeds. Mix well to blend all flavors.
