Creamy Chicken Gnocchi Pan (Printable Version)

# What You'll Need:

01 - 1 pound fresh potato gnocchi.
02 - 1.5 pounds chicken thighs, no skin or bones.
03 - 1.5 teaspoon smoked paprika.
04 - 5 tablespoons salted butter or ghee.
05 - 1 medium yellow onion, chopped small.
06 - 1 cup white mushrooms, chopped into bits.
07 - 2 tablespoons crushed garlic.
08 - 1 teaspoon dried Italian herbs.
09 - 1 cup chicken stock.
10 - ½ cup cream or half and half.
11 - ½ cup shredded mozzarella cheese.
12 - 3 cups fresh spinach leaves.
13 - Parsley, parmesan and red pepper flakes for topping.

# Preparation Steps:

01 - Sprinkle chicken with paprika, salt and pepper. Brown in 2 tablespoons butter until golden, about 5-10 minutes each side.
02 - Drop in remaining butter, toss in onion, mushrooms, garlic and seasonings. Cook until soft.
03 - Pour in stock, slowly stir in cream. Add mozzarella and mix until sauce gets thick.
04 - Toss in cooked gnocchi and fresh spinach. Put chicken back in pan and simmer briefly. Add toppings and eat up.
