In a large mixing bowl, thoroughly incorporate ground beef, breadcrumbs, milk, egg, onion, garlic, salt, black pepper, Worcestershire sauce, and 1/4 cup chopped parsley until cohesive but not overworked.

Scoop a tablespoon of the beef mixture, flatten in your palm, place approximately 1 teaspoon of grated cheddar in the center, then enclose cheese entirely with the meat to form a compact ball. Arrange on the prepared baking sheet. Repeat with remaining mixture.

Mix ketchup and mustard in a small bowl. Evenly brush the glaze over each assembled meatloaf bite.

Place meatloaf bites in the oven and bake for 25–30 minutes, or until the centers are cooked through and the exterior glaze is caramelized.
