Turn the oven on to 400°F and coat the mini muffin pan with oil or cooking spray.

Stir the mashed potatoes and eggs together, toss in most of the cheese, mix in chives, and add salt and pepper.

Spoon the mix into each muffin cup, then sprinkle the saved cheese on top.

Bake for 15–20 minutes until golden. Let them cool a bit, remove carefully, sprinkle with chives, and enjoy while warm.
