01 - 5-6 medium-sized sweet potatoes.

# Preparation Steps:

01 - Set oven to 350°F. Cover your baking dish with aluminum foil.
02 - Melt butter in a pan, cook the shallots until soft. Stir in garlic and herbs, let it cook a few seconds. Add the flour, give it a minute, then slowly mix in milk till it starts thickening. Pour in the cream, season with spices, and stir in 1 cup each of cheese. Keep warm on low heat.
03 - Peel sweet potatoes and slice them thin, roughly 1/8 inch. Arrange slices neatly for layering later.
04 - Spread half the sauce in the base of the dish. Layer on the potato slices in overlapping rows. Top with the rest of the sauce, then cover snugly with foil.
