Texas Roadhouse Smothered Chicken (Printable Version)

# What You'll Need:

01 - 1 medium onion, sliced into thick rings.
02 - 1 tablespoon butter, plus more if you'd like.
03 - 2 chicken breasts, large size.
04 - 1/2 pound mushrooms, sliced thin.
05 - 1/4 pound shredded Monterey Jack cheese.
06 - 1 teaspoon flavored salt mix.
07 - 1/2 teaspoon ground pepper.
08 - Add salt if needed.

# Preparation Steps:

01 - Slice chicken breasts sideways, then pound flat under plastic wrap. Sprinkle with pepper and flavored salt.
02 - Turn heat to medium-low and melt butter. Toss in onion with a little salt, cook for a few minutes. Add mushrooms, let them brown for 3-4 minutes. Take everything out of the pan.
03 - Heat more butter if pan is dry. Place chicken, let it cook 6-8 minutes on the first side. Flip and cook for another 3-4 minutes.
04 - Put the veggies over the chicken. Sprinkle cheese on top and wait till it melts. Serve while it's hot.

# Additional Tips:

01 - Don’t crowd the pan or the chicken won't cook evenly. Cook in rounds if needed. Keep chicken level so it cooks at the same pace. It's best eaten when the cheese is still gooey.
