Set oven to 475°F. Peel potatoes, then slice into 8 wedges each. Coat pieces with olive oil and put them on a greased tray. Sprinkle with salt to taste.

Bake for about 15 minutes, then turn them over and season the other side. Continue cooking 10-20 minutes more until they’re golden and crunchy. Keep an eye on them near the end!

Melt butter, mix flour in, and let it cook for 30 to 60 seconds. Slowly pour in milk while whisking nonstop. Heat until it thickens (about 3-4 minutes). Take it off the burner, stir in cheese bit by bit, and season with cayenne, plus a little more salt and pepper.

Plate the fries and drizzle cheese sauce over the top to serve.
