Cheesy Fries (Printable Version)

# What You'll Need:

01 - 2 large or medium russet potatoes.
02 - 2 tbsp of olive oil.
03 - Salt and pepper (or seasoning salt).
04 - 1 tbsp of salted butter (14 grams).
05 - 1 tablespoon flour (8 grams).
06 - 3/4 cup of milk (any kind works).
07 - 3 oz shredded sharp cheddar (about 3/4 cup).
08 - A dash of cayenne.
09 - Adjust salt and pepper as needed.

# Preparation Steps:

01 - Set oven to 475°F. Peel potatoes, then slice into 8 wedges each. Coat pieces with olive oil and put them on a greased tray. Sprinkle with salt to taste.
02 - Bake for about 15 minutes, then turn them over and season the other side. Continue cooking 10-20 minutes more until they’re golden and crunchy. Keep an eye on them near the end!
03 - Melt butter, mix flour in, and let it cook for 30 to 60 seconds. Slowly pour in milk while whisking nonstop. Heat until it thickens (about 3-4 minutes). Take it off the burner, stir in cheese bit by bit, and season with cayenne, plus a little more salt and pepper.
04 - Plate the fries and drizzle cheese sauce over the top to serve.
