Heat olive oil or butter in a skillet over medium heat. Saute chopped onion for 3 to 5 minutes until translucent.

Add sliced mushrooms to the pan and cook for an additional 2 to 3 minutes, stirring gently.

Stir in chopped broccoli and cubed cooked chicken. Continue to cook for 2 minutes until heated through. Remove from heat and set aside.

Line a large baking sheet with parchment paper. Unfold thawed puff pastry sheets. Cut each sheet into four equal squares and gently roll them into rectangles.

Distribute filling evenly on each pastry rectangle. Sprinkle with shredded cheese.

Fold the pastry sides over the filling and pinch edges firmly closed to seal.

Arrange puffs on the lined baking sheet. Bake for 20 minutes or until pastries are puffed and golden brown.
