Set oven to 190°C (375°F) and allow to fully preheat.

Heat a skillet over medium heat. Add ground beef, onion, and garlic. Cook, stirring often, until beef is browned and onions are translucent.

Drain any excess fat from the skillet. Transfer beef mixture into a bowl and cool slightly. Mix in grated cheddar, mozzarella, parsley, salt, and pepper until evenly combined.

On a lightly floured surface, roll out pizza dough into a rectangle. Distribute beef and cheese mixture evenly over the surface of the dough.

Starting from a long edge, roll the dough tightly into a log. Cut the log into slices approximately 2.5 cm thick.

Place rolls, cut side up, on a parchment-lined baking tray with space between each piece.

Bake in the preheated oven for 25–30 minutes, or until rolls are golden brown and cheese is bubbling.
