Herb Butter Roasted Turkey (Printable Version)

# What You'll Need:

01 - 2.5-3 kg turkey breast, bone-in with skin.
02 - 1/2 tsp of salt.
03 - Freshly cracked black pepper.
04 - 4 sprigs of rosemary.
05 - 8 sprigs of sage.
06 - 10 thyme sprigs.
07 - 12 cloves of garlic, lightly crushed.
08 - 150g soft unsalted butter.
09 - 1 1/4 tsp of table salt, for butter.
10 - 1/2 tsp of black pepper, for butter.
11 - 4 big garlic cloves, finely chopped.
12 - 1 tbsp fresh sage, finely minced.
13 - 1 tbsp fresh rosemary, chopped up.
14 - 1 tbsp thyme leaves.
15 - 1 tbsp parsley, finely chopped.

# Preparation Steps:

01 - Let the turkey sit out for 45 minutes to drop the chill. Heat your oven to 200C/390F during this time.
02 - Lay your garlic and herb sprigs in the center of your roasting dish.
03 - Blend soft butter with garlic, herbs, salt, and a dash of pepper.
04 - Slip a spoon under the skin to loosen it. Spread two-thirds of the butter underneath, then use the rest on top and underneath the turkey.
05 - Place the turkey right over the herbs. Turn the oven down to 180C/350F and bake for 1.5 hours, basting it every 30 minutes.
06 - Bake until the turkey’s internal temp is 74C/165F. If it browns too much, cover it with foil.
07 - Give it 15-20 minutes to rest before cutting it up. Pair it with some pan sauce made from the butter.

# Additional Tips:

01 - You can assemble it the day before, up to 24 hours early.
02 - Allow 15 minutes of cook time for every 500g/1lb of meat.
03 - Dried herbs can replace fresh ones if needed.
04 - Cut back on salt if the turkey was brined.
