In a large bowl, combine shredded chicken, blended cottage cheese, Frank’s RedHot sauce, garlic powder, onion powder, paprika, dried parsley, black pepper, and salt. Mix thoroughly until uniform.

Spoon the chicken mixture into the prepared zucchini boats, filling each evenly.

Place stuffed zucchini on a baking sheet or oven-safe dish. Bake for 20 minutes or until zucchini is tender.

Sprinkle light feta cheese over the stuffed boats. Return to oven and bake an additional 10 minutes until cheese is slightly golden.
