01 - 3 medium sweet potatoes.
02 - 3 tbsp unsalted butter.

# Preparation Steps:

01 - Get some salted water boiling. Cook potato pieces for 7 minutes. Sprinkle some pepper and salt on them. Add half the sugar and mix it in.
02 - Warm the rest of the sugar with the ginger. Pour in the bourbon and stir well. Toss in the butter. Wait for it to bubble. Sprinkle some salt and pepper. Mix in lime juice, nuts, and dried parsley.
03 - Warm up the oil in a skillet. Fry the potatoes till they're browned and crispy on each side.
04 - Drizzle the glaze on top. Sprinkle pomegranate seeds all over. Add lime zest and a little parsley for garnish.
